1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz. red food coloring
Makes about 10 servings.
-1 package Sugar Cookie Dough
-1 (8oz) package cream cheese, softened
-1/3 cup granulated sugar
-1/2 teaspoon vanilla extract
-1 1/2 cups fruit, (berries, sliced kiwi, peaches or strawberries) (I used only strawberries and kiwi)
1. Preheat oven to 350°F. Grease bottom and side of 9-inch pan.
2. Press cookie dough evenly into greased baking pan.
3. Bake for 18 to 22 minutes or until lightly golden and wooden pick inserted in center comes out clean.
4. Cool completely in pan on wire rack. (I put it in the fridge since time was running out)
5. Beat cream cheese, sugar and vanilla extract in small mixer bowl until smooth.
6. Spread evenly over cooled cookie crust to within 1/2-inch of edge.
7. Arrange fruit as desired on top of cream cheese mixture. Refrigerate for 1 hour.
