Sorry I haven't updated in a while. I have busy with work and do not like going on the computer after I get home from work since I am on it all day. But this recipe is well worth the wait. These cupcakes taste like something you get from your favorite cupcake shop!
Ingredients for cupcake:
2 1/2 cups all purpose flour
2 cups sugar
1 Tablespoon cocoa
1 teaspoon salt
1 teaspoon baking soda
2 eggs
1 cup oil
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon vanilla
1 oz. red food coloring

Directions for cupcake:
1. Preheat oven to 350 degrees and line cupcake pan with liners (this will make about 18-20 cupcakes)
2. Lightly stir eggs in a medium bowl with a wire whisk. Add remaining liquid ingredients and stir together with whisk until blended. Set aside.
3. Place all the dry ingredients in your mixing bowl and stir together really good with another wire whisk.
4. Add wet ingredients to the dry ingredients and mix on medium-high for about a minute or until completely combined.
5. Pour into cupcake pans and then drop the pans on the counter a few times to release any air bubbles
6. Bake for about 20-22 minutes or until a toothpick inserted comes out clean.
7. Then make the frosting.
Ingredients for frosting:
1 stick butter, softened
8 ounces cream cheese
3 cups confectioners' sugar
1.5 teaspoons vanilla extract
Directions for frosting:
1. Beat softened butter and cream cheese until well blended.
2. Add powdered sugar and vanilla. Beat until creamy.
